Sherry, 'Jerez' or 'Xerez' in Spanish, is a wine that has deep roots in Spanish history and tradition. Jerez de la Frontera, in Andalusia, Spain, has been a vinicultural center since wine-making was introduced here in 1100 BC.
This category is somewhat of a mystery for most of us. When thinking of sherry sweet, dessert wines or cooking sherries come to mind. But sherry is vast in its form and complicated in production. From dry, pale-colored finos, to dry, amber-tinted amontillados, and sweet, dark Pedro Ximénez, the range of sherry wine is extensive.
While the flavor profiles of sherry are unique, it is the production that is truly unusual. Pressed from only three grapes grown in Andalusia, fortified, then introduced into the solera system, where the wine moves from one criadera to the next resting under the delicate 'flor' at each step. It is impossible to say the age of the wine because it is blended at each step into older criaderas, but each barrel is never younger than 60 years old. The result is an incredible and layered product with flavor profiles not found in other wines.
