Hillersden's Reserve Fume Blanc is part of a special tier of wines made using top quality grapes and unique methods. It is made from sustainably-grown, rigorously-sorted 100% Sauvignon Blanc estate grapes grown in the Upper Wairau Valley of Marlborough. This high-altitude region features a mix of alluvial and glacial soils interspersed with clay and sandy loam. Large diurnal temperature variation promotes slow ripening and provides the foundation for wines with weight, minerality and complexity - the perfect ingredients for food-friendly wines. This Fume Blanc is fermented using native yeast and is aged on lees in a mix of new and used French oak barriques to build structure and complexity and allow for graceful aging over time.
